Season the tuna steaks with black pepper and cook on a hot pan for 2 minutes each side. Place the eggs in a small saucepan and cover with water. Bring to the boil and simmer for 4–5 minutes. This will produce soft-boiled eggs, if you want hard-boiled, simply double the time. Remove and place eggs in cold water, to prevent them cooking further. When cooled, roll on a flat surface applying slight pressure so the shell cracks, and peel. While the eggs are cooking, add the ingredients for the vinaigrette to the bottom of a large salad bowl and give a quick whisk.
